It also highlights particular populations that have the highest rice consumptions, which include Southern and South East Asians, weaning babies, gluten intolerance sufferers and those consuming rice milk. The book also presents the information of arsenic concentration and speciation in other major crops and outlines approaches for lowering arsenic in rice grain and in the human diet through agronomic management.

Mainly for Agronomists

Almost all foodstuffs (and our drinking water) contain potentially harmful arsenic compounds. Rice contains, by far, the highest concentrations of these compounds. Consumers should be able to make informed decision about rice (and rice product) consumption. However, "Arsenic & Rice" contains everything you wanted to know about the global arsenic-in-rice situation--if you are an agronomist or plant scientist. The book is not a sequel to "Venomous Earth," which *was* written for the lay reader (and is a great read). None-the-less, "Arsenic & Rice" is a thoroughly researched, well-organized text, from which with the aid of, say Wikipedia, a lot of relevant material can be understood by a readership with some science background. The section likely to be of most interest to the general reader is "risk assessment from arsenic in rice;" unfortunately, the section is rather short and rather technical. The authors are careful not to use subjective language, though they do conclude a discussion of the exposure of adults in the US with the statement, "the situation is more problematic for children." The recent "Consumer Reports" article, "Arsenic in your Food," (on the web Sept 2012) is a more accessible account of the situation in the US and comes to much the same conclusion: we are eating too much of the toxic arsenic compounds.
